Dr. Jacob was raised in Trent, Texas, which is just west of Abilene. After graduating as valedictorian of her senior class, she left to pursue her undergraduate degree at Texas Tech University in Lubbock, Texas. She received a Bachelor of Arts in Biochemistry, graduating magna cum laude. She earned her Doctor of Optometry degree from the University of Houston, again graduating magna cum laude. In 2008, she began practicing as Associate Optometrist at Texas State Optical (TSO) in Bridge City, Texas and eventually opened her own Texas State Optical practice in Lockhart.
